3 DELICIOUS RECIPES TO CELEBRATE PANCAKE TUESDAY

Pancake Tuesday is here, and it's time to indulge in some mouth-watering pancakes! Whether you’re a fan of delicate French crepes, thick and fluffy American-style pancakes, or something a little more creative, we've got the perfect Pancake Tuesday recipe for you. Get ready to enjoy a flipping great day with these easy-to-make, delicious pancakes brought to you by Irish chefs.


Ingredients:

  • 150g plain flour
  • 1 tbsp caster sugar
  • 2 eggs, beaten
  • 25g butter, melted
  • 250ml milk
  • 100ml water

Method:
  1. Place the flour & sugar in a bowl and make a well in the centre.
  2. In a separate bowl, whisk the eggs & add the melted butter, milk & water.
  3. Pour the liquid ingredients into the well in the centre of the flour & sugar, whisking as you go.
  4. Set aside to stand in the fridge for 30 minutes.
  5. Place a frying pan on medium heat & grease the pan. Now pour a little batter, swirling the pan so that there’s just a thin layer in the base. Cook for about a half to one minute, until bubbles rise to the surface, and its golden underneath. Then flip over and cook on the other side.


CLODAGH MCKENNA'S AMERICAN STYLE BLUEBERRY PANCAKES 


Ingredients:

  • 150g plain flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tbsp caster sugar
  • 175ml milk
  • 1 tbsp lemon juice
  • 2 tbsps butter melted
  • 1 egg, separated
  • 250g fresh blueberries


Method:
  1. Place the flour, baking powder, soda, pinch of salt into a bowl & stir.
  2. Stir the milk & lemon juice in a bowl & leave for 10 mins so it will turn into buttermilk. Add 1 tbsp of the melted butter & the egg yolk then whisk.
  3. Pour the wet ingredients into the flour & fold together. Now stir in the reserved egg white & blueberries. Don't whisk this as you will knock the fluffiness out of your pancakes!
  4. Place a frying pan over a low/medium head & melt a tbsp of butter. Then spoon the batter into the frying pan, making the pancakes as big or small as you want.
  5. Cook for 2 minutes & then turn and cook for 1 minute.

Serve with lots of maple syrup and your choice of toppings. 




Ingredients:

  • 200g plain flour
  • 2 tsp baking powder
  • Pinch of sea salt
  • ½ tsp ground cinnamon
  • 220ml milk
  • 2 large eggs
  • 30g butter, melted
  • 50g hazelnuts, toasted, roughly chopped

 

For the caramelised bananas:

  • 75g butter, plus a knob
  • 100g golden syrup
  • 8 mini bananas, peeled & halved lengthways
  • 1 tbsp caster sugar

Method:
  1. To make the pancake batter, put the flour, baking powder, salt & cinnamon into a large mixing bowl. Measure the milk in a jug and add the eggs. Whisk lightly to combine, then add the liquid to the dry ingredients and mix until blended and you have a thick batter. Set aside in the fridge.
  2. For the bananas, put the 75 grams of butter and golden syrup into a small saucepan over a high heat and bring to the boil. Reduce the heat and allow the mixture to simmer and bubble for about 3 minutes until the sauce thickens. Remove the pan from the heat.
  3. Coat the bananas in the caster sugar and melt the knob of butter in a large frying pan over a medium heat. Add the banana slices and fry them on all sides until golden. Pour over the butter and golden syrup sauce and stir gently to combine. Set aside.
  4. To cook the pancakes, brush a warm frying pan with a little of the melted butter and pour in a small ladleful of the batter. The pancakes should each be about 10cm wide.
  5. Allow them to cook until little bubbles start to appear and the edges become a little dry, then turn over to cook for about a minute until golden brown.
  6. Serve immediately on warmed plates with the caramelised bananas and sauce on top, sprinkled with the toasted hazelnut
