Spooky season is here, and we all know what that means...  pumpkins! This Halloween let's put the usual Jack-o-Lantern to a yummier use with some delicious leftover pumpkin recipes.

Did you know that the tradition of Halloween stems from Ireland and the ancient festival of Samhain? The Irish immigrants brought these traditions to America when fleeing the famine. Originally, the Irish carved turnips to ward off unwanted visitors, but over time pumpkins, available in abundance in America, took their place.

Thankfully, the pumpkin carving tradition made its way back to Ireland; have you ever seen a traditional Jack-o-Lantern turnip? Terrifying!

As much as we love this tradition, it, unfortunately, comes with a lot of wastage. At Eatto, we are proud to promote sustainability and with this in mind, we’ve put together a list of some of our favourite leftover pumpkin recipes you need to try this Halloween!
